Grilled Salmon with Tropical Fruit Salsa

Ingredients

  • Four 5-ounce PrimeWaters® Salmon portions
  • Kosher salt and pepper, to taste
  • 1 tablespoon olive oil

Tropical Fruit Salsa
  • 2 tablespoons olive oil
  • 3/4 cup fresh pineapple, diced small
  • 3/4 cup fresh mango, diced small
  • 2 tablespoons red onion, minced
  • 3 tablespoons cilantro, chopped
  • 1 jalapeño, minced
  • Juice and zest from 1 lime
  • 1-2 tablespoons honey
  • Kosher salt and pepper, to taste

Instructions

Prep:
  • Rub the salmon with 1 tablespoon of olive oil.
  • Season with salt and pepper.
  • Combine all salsa ingredients in a bowl and season with salt and pepper to taste.
  • Adjust sweetness and heat by adding more jalapeño or honey, if desired. Set aside.

Cook:
  • Preheat grill to medium-high heat. Place salmon on grill skin-side up.
  • Grill for approximately 4 minutes or until the salmon releases from the grill.
  • Turn the salmon 90° to make crossed grill marks. Cook for another 2 minutes.
  • Flip the salmon over and cook 4 more minutes on the skin-side or until the thickest part of the salmon reaches an internal temperature of 145°F.
  • Once the salmon is cooked through, remove from the grill and cover with foil. Let rest for 5 to 10 minutes.

Serve:
  • Plate salmon and serve with fruit salsa.
