Roasted Basa with Vegetables

Ingredients
2 basa fish fillets
4 teaspoons butter
½ tablespoon paprika
1 tablespoon dried basil, divided
1 teaspoon salt, divided
1 teaspoon lemon juice , divided
4 lemon slices
2 tablespoons olive oil
1 medium size zucchini
1 medium size yellow squash
2 red bell peppers
Black pepper to taste
Lemon wedges, if desired
Instructions
Prep
Preheat oven to 350 F.
Line a baking sheet with parchment paper and place basa on the baking sheet.
Melt butter. Add paprika, basil, 1/8 teaspoon salt and 1/8 teaspoon lemon juice.
Spread the marinade on both sides of fish using cooking brush or spoon. Let sit for 20 minutes.
Dice the zucchini, squash and red peppers
Toss the diced vegetables with the olive oil, remaining salt, lemon juice and black pepper.
Cook
After the fish has marinated for 20 minutes, place it in the oven and bake for 30 minutes uncovered.
Place the diced vegetables on a second parchment-lined baking sheet and bake for 15 minutes.
Serve
Serve the roasted fish with the vegetables.
Add a squeeze of lemon if desired.
