Roasted Basa with Vegetables

Ingredients

  • 2 basa fish fillets
  • 4 teaspoons butter
  • ½ tablespoon paprika
  • 1 tablespoon dried basil, divided
  • 1 teaspoon salt, divided
  • 1 teaspoon lemon juice , divided
  • 4 lemon slices
  • 2 tablespoons olive oil
  • 1 medium size zucchini
  • 1 medium size yellow squash
  • 2 red bell peppers
  • Black pepper to taste
  • Lemon wedges, if desired

Instructions

Prep
  • Preheat oven to 350 F.
  • Line a baking sheet with parchment paper and place basa on the baking sheet.
  • Melt butter. Add paprika, basil, 1/8 teaspoon salt and 1/8 teaspoon lemon juice.
  • Spread the marinade on both sides of fish using cooking brush or spoon. Let sit for 20 minutes.
  • Dice the zucchini, squash and red peppers
  • Toss the diced vegetables with the olive oil, remaining salt, lemon juice and black pepper.

Cook
  • After the fish has marinated for 20 minutes, place it in the oven and bake for 30 minutes uncovered.
  • Place the diced vegetables on a second parchment-lined baking sheet and bake for 15 minutes.

Serve
  • Serve the roasted fish with the vegetables.
  • Add a squeeze of lemon if desired.
